We choose to harvest our vineyards during the cool Mendoza nights to avoid the heat radiated by our stony soils when exposed to the sun. Harvesting takes place in the early hours, just before dawn, when the grape clusters reach their lowest temperature. This allows them to enter the winery at their freshest, making it possible to carefully select and process them while preserving their maximum freshness.
